Zesty Soba Noodles topped with Lamb

Core ingredients

  • 2 lamb steaks

  • 180 g soba noodles

  • 1 bunch broccolini, finely chopped

  • 1 to 2 tsp minced garlic 


Pantry staples for sauce

  • 1 tbsp olive oil, plus extra for cooking

  • 1 to 2 tbsp soy sauce

  • Juice of ½ lemon

  • Salt and pepper, to taste



Method

  1. Heat a pan over medium-high heat with a little olive oil. Season the lamb with salt and pepper and any herns you like, then cook until golden on the outside and cooked to your liking.

  2. Remove the lamb from the pan and allow it to rest.

  3. Bring a pot of water to the boil and cook the soba noodles according to packet instructions. Drain and set aside.

  4. In the same pan that the lamb was in, add the broccolini. Sauté for a few minutes, until the broccolini is bright green and tender.

  5. Add the garlic and saute for a further 30 seconds 

  6. Add soy sauce, olive oil and lemon juice. 

  7. Add the cooked soba noodles to the pan

  8. Toss everything together until glossy and well combined.

  9. Serve the noodles onto your plate 

  10. Slice the rested lamb and serve it over the noodles.

  11. Finish with extra lemon, black pepper or a drizzle of olive oil if desired.
