One Pan Salmon & Feta Pasta

Ingredients 

2 salmon fillets (skin off)  

1 punnet cherry tomatoes 

2 handfuls of spinach

1 block of feta 

4 anchovies diced 

1 lemon 

Minced garlic 

Olive oil 

Seasoning on your choice  

Spaghetti or fettuccine


Method  

Preheat oven to 180°C.

In a large baking dish, add the salmon fillets, feta block, cherry tomatoes and spinach.

In a small bowl, mix together the diced anchovies, minced garlic, olive oil and lemon juice. Spoon the mixture over the salmon fillets.

Sprinkle everything with paprika, Italian herbs, salt and pepper, then drizzle generously with olive oil.

Bake for 15–18 minutes, or until the salmon is cooked through and flakes easily with a fork.

While the salmon is baking, cook your spaghetti or fettuccine according to the packet instructions. Reserve a little pasta water before draining.

Once the salmon is cooked, use a fork to gently mash the salmon, feta, tomatoes and spinach together in the baking dish until it becomes creamy and saucy.

Add the cooked pasta straight into the dish and toss everything together. Add a splash of reserved pasta water to loosen the sauce and help it coat the pasta.

If it needs to thicken or reduce slightly, transfer it to the stove for a few minutes over low heat, stirring gently.

Serve with parmesan, extra lemon and cracked pepper.

Super easy, creamy, salty, garlicky salmon pasta.
