Quick Sardine Fishcakes

  • 1.5 - 2 tin sardines (springwater)
  • ¾ cup mashed potato
  • 2 eggs
  • 2 tbsp Greek yoghurt
  • 4 tbsp breadcrumbs 
  • 1 tbsp capers (game changer for flavour)
  • 1 spring onion, finely sliced
  • 1 tsp garlic
  • Small handful parsley or dill
  • Salt & pepper

Method
  1. Mash sardines in a bowl 
  2. Add everything else and mix
  3. Form into small patties
  4. Chill for 15 mins (helps them hold)
  5. Bake on baking paper or a wire rack for crispiness
  6. Don’t make them too thick → 2–3cm is perfect
  7. Light spray of oil on top → helps them go golden
  8. Cook: in oven or airfryer
Makes 12 
Temp: 180°C (fan) 
Time: 10-12 minutes 
Flip halfway (around 5 mins) for even browning

I eat these on repeat, the omega-3s, the protein, the calcium from the bones, sardines really do it all. Enjoy! x
